Letter from the Editor
This issue is inspired by a time in my life when I discovered the inextricable link between fine food and a luxury lifestyle.
At the tender age of 20, I stumbled into co-owning a European pastry shop based in Toronto and was a part of its transformation into a celebrated fine dining French-Belgian bistro. With a great deal of hard work, very long hours, grueling work loads and grit I was personally transformed from a cooking novice to a sous chef plus managing the front of house and general management, where I remained at the helm of this successful and Wine Spectator Grand award winning business for five years until I reached a point where I felt it was time to move on to other horizons and professional pursuits.
During this time which included a long, deep period of reflection on fine food, its presentation and its service, began a love affair with fine food, and the experience of fine dining which continues today. It became abundantly clear that fine food and fine living simply go hand in hand and one cannot have one without the other. The fine pleasures of a delectable meal, artistically presented, paired perfectly with an ideal wine, tantalizes the taste buds, delights the senses and can be as mind blowing as taking in the sights of a transcending, incredible travel experience, seeing something beautiful that takes your breath away. All things delectable include that which we taste, see, feel and experience.
In this issue the concept of that which is ‘Delectable’ is not exclusively restricted to the gustatory, but is also a descriptive word for things that carry the same feeling without touching your taste buds. The intersection of food and finery is explored and played with.
