Named as one of the chefs leading Japan’s new wave of gastronomy, Shinobu Namae believes in some fundamental rules to designing dishes such as ‘learn how to think, not just cook’ and ‘don’t be afraid to surprise’. As one of the few chefs that always uses organic ingredients for his dishes, chef Namae worked for Michel Bras’ three-Michelin-star restaurants in Laguiole, France, and Hokkaido, Japan, and found inspiration in his sincere and authentic cooking style.
On the 10th of June, starting at 7pm, they will be celebrating a collaboration between executive chef Nic Vandeerberken and the young, talented Chef Namae. This Japanese/French/Asian fusion menu will take inspiration from Chef Namae’s experience and philosophy in cooking.
Chef Nic Vanderbeeken, of Cascades Restaurant, has 16 years of experience working in and establishing restaurants in France, Netherlands, Belgium, Vietnam and now Bali. His passion and creativity catapulted him to sous chef position in several Michelin restaurants such as ‘t Convent and Grand Caberet before owning his own Bistronomy style restaurant in Belgium. As Executive Chef at Viceroy Bali he has developed the fine dining menu to make CasCades one of the most recognisable and distinguished European restaurants on the island of Bali.
In the lead up to this unique dinner, chefs Namae and Nic, together with a leading Indonesian chef, did a in-depth culinary tour of the island – visiting Balinese farmers to find local, fresh and high quality ingredients for the event.
