Luxury Breakfasts: Interview with Executive Chef: Vito Mollica, Four Seasons Firenze

EAT LOVE SAVOR™ wondered what Chefs thought so we spoke to our friends at the Four Seasons Resorts and Hotels, asking their chefs personal insights about this meal and what stirs their passions in the kitchen.

Where does your passion for cooking come from and what drives that passion?

“I know that I am not the only one to say that but…it was my mother who drove my passion.”

What was the first meal you ever prepared and at what age?

“When I was 8, our primary school teacher asked us to cook a recipe as homework….I made a fresh tomato sauce for my family.”

What is the most favored dish on your breakfast menu?

“Poached eggs with spinach Florentine style”

Brunch or a leisurely breakfast is a popular meal — Why do you think people love brunch so much?

“From Monday to Friday our guests often have formal business lunch and dinner. On Sunday instead they love to relax with their family. On this point let me introduce to you our Sunday Brunch which we are very proud of, held every Sunday from 12 am to 3 pm. The Sunday Brunch of the Four Seasons Hotel Firenze is open to in house guests as well as local people from Firenze and surrounding areas, we are very proud of it.”

What is your idea of a luxurious breakfast?

“Provide local and authentic ingredients, delicious recipes, fast and elegant service”

What is your favorite luxurious breakfast you prepare at your hotel?

“Our Tuscan breakfast have a selections of farm products, from the milk, egg, jams, not only cow yogurts but also sheep and goat milk yogurts. We also offer a large selection of gluten free ingredients. One of my favorite dish is our caramelized French toast made with pan brioche.”
